Fire Roasted Tomato Pasta

I'm a huge pasta lover and thankfully my little family likes noodles, too. I've been making this pasta for them for awhile and we love it. It's pretty simple, but still so good! 



Ingredients:  

  1. Olive oil
  2. 3 garlic cloves
  3. 1.5 lbs. chicken breast
  4. 8 oz. penne pasta
  5. 1 can of fire roasted tomatoes 
  6. 1 c. shredded mozzarella cheese
  7. 1 c. half & half 
  8. 2 tbsp. basil
  9. Paprika 
  10. Red pepper flakes
  11. Saved water from your pasta



 * Drizzle some olive oil in a tall skillet and cook on high heat.

* Mince your garlic and drain your tomatoes (You won't get them completely drained, but at least get the top of the can).

* Once your oil is heated, add garlic and tomatoes to skillet. Saute for about 3 minutes. 

* Remove garlic/tomato mix and set aside.

* Wash and prep your chicken breast.
* Lightly sprinkle chicken breast with salt and paprika 

* Add your chicken into the same skillet that you used for your tomatoes. Cook them for 3 minutes (on each side). The paprika will give them a red tint.

   






* Cook your pasta according to its package. Mine was about 9 minutes boiling with lid on. 

* Drain pasta (saving about 1 cup of the water) and rinse with cold water to keep them from cooking more. 

* On medium heat now, cover your chicken with a lid and cook for another 3 minutes. 



                                                                                                   * Cut chicken up in smaller strips and add them back to the skillet, along with the garlic/tomato mix.     

* Add half & half and mozzarella cheese.

* Bring to a boil, then reduce heat to simmer.

* Cook until cheese has melted, stirring often.

* Once cheese has melted add pasta, basil, and red pepper flakes (the amount of this depends on how spicy you like your pasta).

* Slowly add the water you saved from cooking your pasta. Add it little by little until you reach your desired texture. I like mine thicker, but creamy. 

* Add salt and pepper and simmer for about 2 minutes to let all those spices soak into your pasta. 

Your pasta is ready to serve! 


For sides, I cheated a little. I found these seasoning packets from either Kroger or the Walmart Neighborhood Market. It's by Red Fork Food brand and I've been trying them out recently. I've been pretty impressed so far. Tonight, I used this Garlic Roasted Potato Seasoning Sauce. 

* Wash, dry, and cut your red potatoes ( I used about 2 lbs. of red potatoes) in at least fourths. 

* I put mine in a casserole glass pan with some olive oil drizzled over them.

* All you do next is pour the sauce over them and roast them in the oven on 400°F for about 20-25 (mine took about 25) minutes. 




 I also buttered some bread and put garlic powder on them and put those in the oven just until they were a little toasted.















I topped my pasta off with some more red pepper flakes and just a little more basil. 


This meal took me 30-45 minutes. I recommend starting with your potatoes, then sautee the tomatoes, and once the chicken is cooking, start your pasta. Bon appetite!
