Homemade Tomato Soup // Cook With Me 



I have another 'Cook With Me' up today over on All The Things With AllyBrianne that I'm so excited about! Make sure to check out the how-to video on my Homemade Tomato Soup over on my lifestyle channel, but I will have the ingredient list with basic instructions down below. 



Tomato Soup Ingredient List

  • 10-12 Roma tomatoes (sliced)
  • A half container of cherry tomatoes (sliced in half) 
  • 6-8 garlic cloves (smashed & sliced in half) 
  • Olive oil (3 tbsp.)
  • Salt & pepper 
  • 2 Vadala onions (sliced) 
  • 1/2 C. Basil leaves (a few tbsp. of dried basil works too) 
  • 1 tbsp. Italian seasoning *optional
  • 1-2 C. Chicken broth *depending on how thick or thin you want your soup (vegetable broth works too) 
  • 2 spoonfuls of flour 
  • A half C. of Half n Half (or heavy cream) *You can add more or less depending on how creamy you want your soup. A half-cup was perfect for my liking. 
  • *optional* Shredded Parm for garnish 



How-To

  • Wash all tomatoes & slice them
  • Preheat oven to 400
  • On a cooking sheet pan lay tin foil and pile the tomatoes on.
  • Smash garlic, slice it in half and sprinkle garlic over tomatoes. Drizzle olive oil. 
  • Salt & pepper as well before sticking in the oven to roast for 45 minutes 



  • While the tomatoes roast, you can saute your onions. 
  • Slice both onions, heat pot (or dutch oven) with olive oil, and saute until soft. 
  • Once soft add 1/2 C. chicken broth and flour to onions. This will help thicken the finished soup. 

  • In a food processor (blender, whatever you have...) puree onions with just a little chicken broth to liquify it. Add back to your pot.
  • Once the tomatoes are done roasting, puree them too with the garlic, and add to the pot of onions. 


  • Add salt, pepper, Italian seasoning, basil, 1-2 C. chicken broth depending on how thick you want your soup. 
  • At this point, you can add heavy cream or half n half to your liking before letting it simmer for at least 10 minutes. 
  • Garnish with shredded parm (I, unfortunately, forgot to pick some up) and we like to pair it with grilled cheese. YUM!
