Banana Bread & Pudding // Bake With Me
I recently had the itch to bake and had a lot of bananas on hand. Some overripe and others brand new. So I decided to bake some banana bread while making banana pudding. My family and I like the banana taste to be lighter so I don't overkill it with banana in my recipes, but the banana flavor is still there. Banana Bread
Ingredients:
- 2 C. almond flour (you can use regular flour as well)
- 1 Tsp. baking soda
- 1/4 Tsp. salt
- 1/2 C. butter (melted)
- 3/4 C. brown sugar
- 2 eggs (beaten)
- 4-5 overripe bananas (mashed)
Basic How-To:
- Preheat oven to 350F
- Have four bowls ready. In the smallest whisk eggs until beaten.
- In the next smallest melt butter and then mix in brown sugar until caramelized.
- In your biggest bowl add dry ingredients: flour, baking soda, & salt. Mix them.
- Your medium bowl will hold the mashed bananas.
- In the medium bowl of mashed bananas combine all wet ingredients: butter & brown sugar mixture and beaten eggs. Mix well.
- Then slowly combine the wet ingredients to the large bowl of dry ingredients. Mix until everything is combined well and you have a somewhat doughy texture.
- In a greased bread pan add mixture and bake for 60 minutes on 350F
- I check the progress with a toothpick to see if the bread is well baked.
- Once out of the oven I let it cool on a cooling rack before slicing.
Banana Pudding
Ingredients:
- 2 vanilla pudding box mixes
- 4 C. cold milk
- 1 can sweetened condensed milk
- 1 Tbsp. vanilla extract
- 1 container frozen cool whip
- about half a package of golden Oreos (off-brand or vanilla wafers work too. It's just your preference)
- 3 bananas (is what I used. You can use more or less.)
Basic How-To:
- Beat together pudding packages with cold milk as shown on the box. I mixed for about 5 minutes.
- Then add in the entire can of sweetened condensed milk and mix again until well blended.
- Once mixed well fold in the frozen cool whip with a mixing spoon. The texture should be a thicker pudding consistency.
- Slice bananas and have a serving bowl/dish ready for the layering process.
- Layer: cookies, bananas, pudding, and repeat until filled (or you run out) leaving the top layer pudding.
- With a rolling pin, I smashed some cookies to sprinkle over the top.
- Let chill in the refrigerator for at least 2 hours before serving.
