Creamy Tuscan Bake | Recipe

Merry Vlogmas! Today's video is on this creamy tuscan bake that is so delish. Below is, of course, the ingredient list for an easy screenshot and basic steps to walk you through it when you make it. Let me know if you try it! xo

Creamy Tuscan Bake Ingredients:

  • 4-5 skinless boneless chicken thighs - chopped
  • half a package of bacon - chopped
  • 1 Tbsp. olive oil
  • 1 16 oz. box bowtie pasta - cooked according to box instructions (I recommend cooking 1/2-3/4 of the box instead of the whole thing!)
  • 2-4 garlic cloves - minced
  • 2 tomatoes - chopped
  • 1 8 oz. bag of spinach
  • salt & pepper
  • 1 c. shredded Parmesan cheese
  • 1 1/2 c. half n half
  • 1 c. pasta water - left over water from draining the pasta
  • 1 Tbsp. parsley - flakes or fresh chopped
  • *breadcrumbs
  • *red pepper flakes
*optional

How-To:
  • Heat olive oil in larger skillet or soup pot (like above)
  • Chop chicken and bacon. Then add to the warmed up pot
  • Season with salt & pepper and cook until cooked through (medium heat, 10 minutes at least)
  • Cook pasta according to package instructions
  • While those are cooking mince your garlic and chop up the tomatoes
  • Preheat oven to 350F
  • Once the chicken/bacon mix is cooked, remove from pot and sit aside
  • Add garlic, spinach, tomatoes, salt, & pepper to pot. Cook until tomatoes are soft and spinach is wilted
  • Drain pasta, saving 1 cup of pasta water. If you forget this step that is okay. You can always use 1 c. water or 1 cup chicken stock in its place.
  • Add chicken/bacon mix back into the pot with the veggie mix
  • Then add pasta, pasta water (or substitute), half n half, & 1/2 cup shredded Parmesan
  • Stir altogether and once cheese is melted pour it all into a baking casserole pan.
  • Top it with parsley and the rest of the shredded Parmesan cheese. *You can also top it off with bread crumbs (I didn't for mine) *optional
  • Bake at 350F for 20 minutes
  • For an extra kick I added red pepper flakes to my serving. It's so delish and so is the leftovers the next day!
Enjoy xo
